Pizelle Passionfruit Icebox Cake
Makes 1 cake
Another no-bake recipe for the books! Just a few simple ingredients couldn’t make a more delicious dessert. If you can’t find passion fruit, use any lightly mashed fruit you wish.
25 Pizelle cookies, or other thin wafer.
2 cups cream
2 tablespoons superfine sugar
1 teaspoon almond or vanilla extract
3 passionfruit, flesh scooped out
Whip the cream until frothy. Add sugar and vanilla. Continue to whip until stiff peaks.
Line a round cake pan with plastic wrap. Lay a single layer of cookies, it’s okay if some of them overlap. Spread a ¼ inch-⅓ inch layer of whipped cream and repeat. Refrigerate overnight or at least 6 hours. Before serving, pour passionfruit over the top of the cake. Slice and serve.
