Peach Crumble To Love

The end-of-summer peach season warms my kitchen with the resulting sweet creations made from the luscious stone fruit… From pies to tarts, crumble is an easy and light summer crisp that is sure to please.

PEACH CRUMBLE

6 peaches, peeled and sliced into 1/4″ thick wedges

1 Tblsp vanilla

1/3 cup sugar

1 tsp cinnamon

1/2 tsp nutmeg

For the crumble topping:

1 cup flour

1/3 cup sugar

1/4 brown sugar

1 tsp salt

1 stick (1/2 cup) butter, cubed

Directions:

  1. Preheat the oven to 350 F.
  2. In a large bowl, combine the peaches, vanilla, sugar, cinnamon and nutmeg. Set aside.
  3. In a food processor, quickly pulse together the flour, sugars, salt and butter until you get chunky lumps. Don’t over-pulse.
  4. In your baking dish (9″, but you can use any size), scoop in the peaches and top with the crumble topping.
  5. Bake for approx. 45mins or until golden and crisp.
  6. Serve with ice cream or whipped cream.

For the whipped cream topping: simple whisk together 1 cup of heavy whipping cream with 2 Tblsps of honey. Don’t over-whip.
