This crisp and refreshing iced treat is perfect for Memorial Day weekend, or future summer weekends relaxing with friends and family. The simple ingredients means you can make it easily without fuss, and the outcome is sure to impress. Try these with our other iced treats, for a refreshing time in the heat. Children love these as much as adults, and they work well for a healthier treat for the little ones.

3 cups fresh raspberries
1 cup water
¾ cup sugar
1 tablespoon lemon juice
- Heat water until simmering. Stir in sugar until dissolved. Turn off heat and cool to room temperature.
- Mash raspberries by hand or with a food processor. Stir into sugar syrup and lemon juice. Pass through a strainer, pressing out all the juicy bits but leaving the seeds.
- Pour into a quarter baking sheet, or other baking dish, the flatter the better. Freeze, stirring occasionally for the first two hours. Then freeze 3 more hours or overnight.
- To serve, rake a fork over the ice to create crystals. Serve in a dish and garnish with fresh raspberries or lemon zest, if desired.
