Healthy Maple Pumpkin Doughnuts

Dairy free, gluten free, sugar free (if you don’t count agave as sugar)… AND they are still fluffy and sweet. Hallelujah its a miracle!

Just in time for Thanksgiving! 

Healthy Maple Pumpkin Doughnuts

You will need…

Doughnuts:
1 3/4 cups gluten free flour (I used King Arthur’s)
1 1/2 tsp baking powder
1 tsp salt
dash of baking soda
1 1/2 tsp pumpkin spice
1/4 cup coconut oil
1 cup pumpkin purée
1 cup agave nectar
2 eggs, beaten
1 tsp vanilla

Glaze:
1/4 cup coconut oil
1/2 cup agave
1/4 cup maple syrup
2 Tblsp soy milk powder
2 tsp pumpkin spice

To do…

  1. Preheat the oven to 350F/175F. Oil a doughnut baking pan with coconut oil.
  2. In a medium bowl, sift together the flour, baking powder, salt, baking soda, and pumpin spice.
  3. In a large bowl, or standmixer, beat together the coconut oil and agave. Then add beaten eggs, and finally the pumpkin puree. Lastly add the vanilla.
  4. While beating on low, slowly add the dry ingredients to wet, a 1/3 at a time.
  5. At this point you can scoop the batter into a piping bag, and pipe the batter into the round doughnut moulds, or if you don’t have a piping bag, you can simply spoon the batter into the rounds (this might get messy, so be sure to clean the edge for even baking.)
  6. Bake for 10-15mins until golden brown.
Maple Glaze:
  1. Combine the coconut oil, agave, maple syrup, pumpkin spice, and soy milk powder. Dip each doughnut into the glaze and set on a wrack to dry. (If you want a thicker glaze, add more soy milk powder.)

  1. Hi, I’ve been following your blog for some time now and I find it pretty cool. I think your recipes are great and easy to follow as well. The one thing I always wonder is how you can manage to keep so thin with all the cooking and food events? Any tips for us food lovers?

    1. Hi Claudia, Thanks for your comment! I have many people ask me this, and its no secret. Its moderation (of sweets), healthy eating, and exercise! I don’t deny myself anything sweet because that leads to binge eating when you get the chance! I will blog about some tips soon on how to treat yourself but still stay healthy!
