Gluten Free Sprinkles Pancakes

I’ve been on a sprinkles kick lately. The other week I made Chocolate Dipped Sprinkles Doughnuts, and the heavenly contrast of chocolate dotted with orange, pink, and green, made me think to what else I could add a splash of colour. I think you can tell what I added them to…. Mmmm pancakes!
I tried a couple times to add the sprinkles to the pancake batter, but every time the colours ran and I ended up with a grey batter and white sprinkles. After researching it a bit further, I finally found a way to add sprinkles to my pancakes while preserving that colour punch! First I froze the sprinkles overnight (this slows the colour from melting away), and then tossed them in the flour pancake mixture before adding the wet ingredients. Genius…

Sprinkles Pancakes

You will need…
1 cup gluten free flour
1/2tsp xanthan gum 
1/2tsp baking powder
1 tblsp powdered sugar
pinch of salt
1 large egg
3/4 cup – 1 cup almond milk (could use coconut, or regular)
1/2 tsp vanilla
3 tbslp multi-coloured sprinkles, frozen**
To do…

**The night before, put your sprinkles in the freezer.
In a large bowl, whisk together the gluten free flour, xanthan gum, baking powder, powdered sugar, and salt. (You could also just use a gluten free pancake mix). Remove the sprinkles from the freezer, and mix into the mixture until just combined.
Heat a large frying pan on medium high heat. I put in a few drops of coconut oil, but you could use butter or oil to grease the pan.
Whisk in the egg, vanilla, and almond milk until the batter is slightly runny. Don’t over mix otherwise the colour of the sprinkles might start to run. 
Your pan will now be hot enough. Pour 1/4 cup full of the batter into the hot pan to form your pancakes and fry on each side for 2-3mins until golden brown. 
Drizzle with honey or maple syrup and top with your favourite yoghurt or whipped cream (oh naughty!)
