Dad’s Gluten Free Peanut Butter & Jam Cookies

For as long as I can remember, my Dad has had a large section of the kitchen cupboard in my parent’s house stocked with a delectable array of cookies. Oreos, maple cookies, chocolate chip, oatmeal cookies, and of course, peanut butter cookies. (Can you tell where I got my sweet-tooth from?) I always admired the inner-child spirit he exuded with his collection of cookies, regardless of his age, not to mention with his favourite snack: the peanut butter and jam sandwich. Can you imagine… My Dad is well into the later half of his life, yet still chows on peanut butter and jam sandwiches! A true young-at-heart! We should all be taking notes… So here’s to youthful minds, Father’s Day, and my Dad’s favourite: pb & j! (I won’t tell him its gluten free…) 
Dad’s Gluten Free Peanut Butter & Jam Cookies

You will need…

1 large egg
3/4 cup sugar
1 cup smooth peanut butter
1/2 tsp vanilla extract
1 Tblsp almond milk (or any dairy free milk)
1 tsp baking soda
1 Tblsp gluten free flour
pinch of salt
jar of your favourite jam (strawberry or raspberry goes best!)
To do…

Preheat the oven to 350F/180C. Line a baking tray with parchment paper.
In a large bowl, beat the egg and sugar until creamy. Add the almond milk and vanilla extract, then the peanut butter. 
Mix in the flour, baking soda, and a pinch of salt.
Scoop 1 tablespoon-full balls of the batter onto the cookie sheet, and flatten with the back of a fork, making a criss cross pattern. Bake for 12-15mins, or until just golden around the edges.
Peanut butter and jam cookie assembly…

Take two peanut butter cookies, and spread jam on one half to make a sandwich!

This Father’s Day my looks are inspired by the best of menswear. The boyfriend jean is a favourite trend for summer, and don’t bother buying them in store… These jeans are easily plucked out of your favourite guy’s closet! They’re named after ‘him’ anyway so might as well make use of his wardrobe too. I also love a big comfortable T and I find men’s T shirt cuts fit the best for this look. But of course I had to wear cute shoes… Even the most masculine inspired looks need to cute shoes. Complete the look with minimal makeup.
