Apple Cinnamon Vanilla Compote
- 6 small Fuji Apples (4 large), skinned and cubed
- 1/2 cup coconut sugar
- 1 cup water
- 1 vanilla pod, halved
- 1 cinnamon stick
- In a large saucepan on medium-high heat, combine the apple cubes, water and sugar until dissolved. Add the vanilla pod and cinnamon stick. Once bubbles start to form, reduce heat to low for a simmer.
- Cook the apples, just covering the pan with a lid for about 30-40mins, or until the apples have cooked down, are soft, sticky, and are golden brown. Add more water, a Tblsp at a time, if all the water evaporates before the apples are properly cooked.
