A Light Chocolate Chip Cookie

In every cookie monster’s path of destruction, there is a saving light in what would have become their defeat by butter.

This light being a healthier chocolate chip cookie version that cuts some of the butter and sugar, and gleefully, the gluten. But I still want my cookies delicious and a bit naughty, so I haven’t dared to compromise on these essential qualities of fluffy, light, soft, and sweet… Gimme more!

A Light Chocolate Chip Cookie

You will need…

1 1/4 cup gluten free flour
1/2 cup almond flour
1 tsp baking powder
1/2 tsp baking soda
pinch of salt
1 egg
1/4 cup butter, melted
1/4 cup maple butter
1/4 cup sugar
1/4 cup light brown sugar
1 tsp coconut extract or vanilla extract
1/2 cup chocolate chips
**if your gluten free flour doesn’t have xanthan gum, add 1 tsp xanthan gum**
To do…

Line a baking sheet with parchment paper. Preheat the oven to 375F/180C.
In a medium bowl, combine the gluten free flour (and xanthan gum if needed), almond flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, or stand mixer, beat the butter, maple butter, sugar, and light brown sugar on medium speed until smooth. Add the egg, followed by the vanilla or coconut extract (I used coconut), and beat until smooth. 
Slowly add the dry ingredients to wet, about 1/4 cup at a time. If your batter still seems too wet, add some extra almond flour until it thickens like cookie dough. Every gluten free flour is different, which is why the measurements need to be adjusted at times.
Turn off the beaters if using a stand mixers. Stir in the chocolate chips.
Roll 1 tblsp amounts of cookie dough into round balls, and place the baking sheet. Press down gently onto each ball to flatten.
Bake for 10-15mins or until just golden.
Makes about 10 medium sized cookies.

The cooler evenings, that seem to be coming earlier this year, mean our wardrobes are going through those transitional stages of summer into fall. I like to pair a heavy over-sized coat with a light dress for an evening. Oh and I’m in love with red eyeshadow…!
