2: Christmas Loaf – Gluten & Dairy Free, Low Sugar, and simply the best!

We’ve all been stuffing ourselves lately haven’t we… Holiday parties, family gatherings, work gatherings, edible gifts from friends… Its nice to have a break sometimes from all that naughty stuff and have a treat that is equally delicious but easier on our systems.

For Day 2, I’ve made a gluten free, dairy free, and low-sugar loaf (sweetened with Agave Nectar and Apple Sauce) that is sure to please! My boyfriend loved it… Loaded with cranberries, walnuts, and dairy-free chocolate chips, its a Christmas loaf at its finest!

Christmas Loaf
1 egg
1 cup apple sauce
2 Tblsp olive oil
1/4 cup agavé nectar
1 3/4 cups gluten free flour (I used Purely Bulk)
1/2 tsp baking powder
1 tsp baking soda
pinch of salt
1/2 cup walnuts, halved
1/2 cup dried cranberries
1/4 cup dairy-free chocolate chips (I used Enjoy Life)
  1. Preheat oven to 375F/180C. Grease a loaf pan with olive oil.
  2. In a large bowl, whisk together the egg and apple sauce. Then add the agavé nectar, and finally olive oil. 
  3. In a separate bowl, mix together the flour, baking powder, baking soda, and salt. Add the walnuts and stir so that they are coated in flour (this will prevent the walnuts from sinking to the bottom of the loaf when baking.)
  4. Add the dry mixture to wet and mix until well combined. 
  5. Stir in the cranberries and chocolate chips.
  6. Pour into the loaf pan and drizzle with olive oil. Bake for about 30-40mins or until golden brown, and a toothpick inserted in the middle comes out clean.
  7. Drizzle with agavé nectar and serve!
